  1. You need of pearl barley.
  2. You need of water.
  3. You need of butter.
  4. Prepare of chopped garlic.
  5. You need of mushrooms.
  6. It's of spinach.
  7. Prepare of small chopped onion.
  8. It's of Salt and pepper.
  9. You need of Cheese for shaving on top.
  10. Prepare of thyme.

Barley Risotto instructions

  1. Boil barley in water over high heat, after 1 boil keep it on slow for 20-25 mins or until done..
  2. In a pan, take butter put garlic and cook until it starts to get golden from edges..
  3. Add onions and cook for 2 mins.
  4. Put mushrooms and cook for couple of mins, add salt and pepper..
  5. Add barley (once cooked) and stir, add spinach, stir gently & add herbs.
  6. If you like creamy you can add some white wine too and some cheese..
  7. Shave parmesan cheese on top before serving.
