Ingredients of Tomato Curry
- You need of medium tomatoes chopped.
- You need of potatoes boiled & peeled.
- You need of Salt.
- You need of sugar.
- It's of garam masala powder.
- It's of chopped coriander leaves.
- You need of mustard oil.
- It's of Some water to cook.
- Prepare of Tempering:.
- You need of Bay leaf,cloves,cardamoms.
- Prepare of green chilli slit.
- Prepare of cumin seeds.
- You need of asafoetida powder,.
- It's of Slurry:(1 teaspoon each).
- Prepare of Turmeric, red chilli and cumin powders Ginger-garlic paste, 2 tablespoon water.
Tomato Curry step by step
- Heat the oil in a wok.
- Add the tempering ingredients one by one and wait for the seeds to splutter.
- Once done, add and sauté the onions until translucent.
- Meanwhile create the slurry and keep it ready.
- Once onions are done, add the slurry and cook covered until oil separates.
- Then add in the tomatoes followed by salt. cook covered until they turn mushy.
- Once almost done, roughly mash the potatoes and add them now.
- Mix well and add some water good enough to bring the gravy to desired consistency.
- I like my curry dry, so it took roughly 10 minutes to cook..
- To finish, add a dash of sugar, coriander leaves and garam masala powders(add a dash of kasuri methi for that extra flavour, if desired).
- Mix well and take off heat..
- Serve our lovely tomato curry with pooris, chapatis, parantha, etc. Enjoy!.
